Ragi Mudde Recipe

Ingredients

  • Ragi Flour (Finger Millet Flour) - 1 cup
  • Water - 2 cups
  • Salt - a pinch 
  • Ghee - 1 tsp (optional)

Cooking Instructions

  1. Boil Water: In a large saucepan, bring 2 cups of water to a rolling boil. If using salt, add a pinch of salt to the water.

  2. Make a Slurry: In a small bowl, take 1 tablespoon of ragi flour and mix it with a little water to form a smooth, lump-free slurry.

  3. Add the Slurry: Pour the ragi slurry into the boiling water, stirring continuously to prevent lumps from forming.

  4. Add the Remaining Ragi Flour: Gradually add the remaining ragi flour to the pan, stirring constantly. Reduce the heat to low, cover the pan, and let it cook for 5-6 minutes.

  5. Form the Dough: Once the flour is cooked, use a wooden spatula or a whisk to vigorously stir and combine the mixture until it comes together as a smooth, non-sticky dough. If desired, add a teaspoon of ghee at this stage for flavor.

  6. Shape the Mudde: Wet your hands with cold water and divide the dough into portions. Shape each portion into a smooth ball (mudde) using your hands. Serve hot with your choice of curry or sambar.
