Foxtail Millet Upma Recipe

Ingredients

  • Foxtail Millet - 1/2 cup
  • Ghee - 2 tbsp
  • Chana Dal - 1 tsp
  • Urad Dal - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Onion - 1, chopped
  • Green chili - 2, chopped
  • Ginger - 1 tsp, chopped
  • Curry leaves - a few
  • Carrot - 1, chopped
  • Green Beans - a few, chopped
  • Green Peas - 1/2 cup
  • Tomato - 1, chopped
  • Salt - to taste
  • Turmeric powder - 1/4 tsp
  • Water - 1 & 1/2 cups

Instructions

1. Heat 1 tbsp of ghee in a pan and roast the foxtail millet for 2-3 minutes until fragrant. Set aside.

2. In the same pan, add the remaining ghee. Add mustard seeds, cumin seeds, chana dal, and urad dal. Let them splutter and turn golden.

3. Add chopped onions, green chili, ginger, and curry leaves to the pan. Saute until the onions turn translucent. Then add chopped carrots, green beans, green peas, and tomatoes. Sauté for a few minutes, then add turmeric powder and salt.

4. Add the roasted foxtail millet to the pan, mix well with the vegetables, and pour in 1 & 1/2 cups of water. Bring it to a boil, then cover and simmer for 15-20 minutes until the millet is cooked and water is absorbed. Fluff with a fork and serve hot.10. Mix well and serve hot.
